Happy Mother's Day
This is a recipe from Mary Chambers who grew up in Saint Louis where she experienced the joys of fine French cooking. This dish is an ode to the great art of coating gently poached skinless chicken with rich delicately spiced veloute sauce, something we just call cream sauce. We have spiked it a little from the original and found a lovely bunch of chives blossomed with fancy pink pom poms for decoration. We are serving in Grandma's old spode platter and wish she were here to share a delicious Mother's Day dinner party with the family.
