This classic salad is made even more glamourous and evocative by adding a few changes. We used fennel in place of celery and switched to the champagne grapes. Then we spiked the seasoning with some chipotle powder. Finally we made the mayonnaise a mellow citrus blend by adding some fresh orange juice. All together it makes a dazzling appearence in our best Baccarat bowl. We like to serve it with our version of Chicken Oskar ~ coming to Jefferson's Table soon.
Forget just the champagne grapes. I'd have some sparkling champagne with that salad.
