Visit to Pacifica Cane Corso ~ Home of Champions
We made the trip all the way from California to see our favorite nephew's New Mexico Ranch that presently acts as the nursery and kennels for his awesome family of a rare yet ancient breed of dogs from Italy. They have an incredible history and almost suffered extinction in the last century but through careful breeding they have been brought back and even recognized by the AKC last year. They were welcomed as a new breed this year at Westminister. Spectacular in stature and surprisingly lovable and even tempered, given their fierce demeanor, it was a big treat to see them up close just frolicking in the snow. For more about these beautiful creatures go to the web site below.

Very cool nephew with some of his Corsos...
Just about thirty miles east of Albuquerque NM we arrived in Edgewood, really only a wide place in the road to some but to locals a picturesque tiny community nestled in softly formed mountains that are dotted with thousands of spunky little pinyons. On the day we arrived everything was hiding under a thin blanket of white and it was freezing! The most exciting thing to happen in this area has been the opening of a huge shiny new Walmart Super Store and possibly the heart warming array of regional dishes pouring out of a small dinning establishment called Chili Hills.

Inspired by Carl's excellent Posole we created the version
below with some special ingredients from Taos and Santa Fe.

Carl's Special Green Chili Burrito
Carl's classic Steak & Gravy
Carl's outrageous Chocolate Chip Cream Pie

So frozen due to the harsh winter snowstorms but happy and satisfied with all the beautiful landscapes and deeply delicious food we turn and head back to california to thaw out. BUT, not before we stop off for some great ale and more inspiring southwest dishes at The Chama River Brewing Co., a place that was recommended. Super tasty and sure to add some final inches to the waistline this hearty "Last Supper", if you will, was just the fuel up we needed to face the hundreds of spectacular scenery along the 100s of miles ahead. Traveling through this true "Land of Enchantment" is endlessly fascinating and surely one of life's great pleasures. New Mexico we will always love you!

This is a great version, I make mine a little different, but all the same flavors, nice looking dogs. Those pies look so yummy.

Wow! Awesome dogs! Their eyes are so interesting. So, they crop some ears and not others? Thanks for introducing us to this breed!
The food looks pretty good too.
