All American Potato Salad
This recipe is one of the most commonplace but
it is in it’s purity one of the all time favorites!
Ingredients:
7 large Idaho,/Russet Potatos
4 eggs hard boiled
1/2 medium onion chopped fine
1 small jar pimento, chopped
4 sweet pickles, chopped
2 T. parsley chopped fine
2 T. pickle juice
1 T. prepared mustard
1 tsp. celery seed
salt & pepper to taste
Miracle Whip style mayonnaise or
regular mayo with 1 tsp. sugar added.
paprika for garnish.
Boil potatos until tender when tested with a fork.
Drain and cool. Remove skins and chop into
large cubes. Add onion, pimento, 3 eggs chopped, pickles and juice, parsley,
mustard and celery seed. Toss with enough salad dressing to
bind ingredients together. (be generous) Add salt & pepper to taste. Pile high in a serving bowl
and sprinkle with paprika
and the remaining egg sliced. Refrigerate
I haven't had potato salad in a long long time. Thanks for reminding me to bring back an old favorite.
