The Best Coconut Cake in the World is in Montecito...
Driving through Santa Barbara, California, on the 101, turn off on Old Mill Road. Instantly find the entrance to the Montecito Inn Cafe. Valet park and rush to the lobby. Turn right into the restaurant and, breathless, cry out, "gimme a slice of the coconut cake, quick!". Sit salivating with pinwheel eyes until a seriously attentive waiter, who full well knows the urgency of the matter, extends forward a plate, no...a vision in white, beige and honey made lacy with the thick coating of coconut. The huge slice is floating in a pool of cream and it's clear that the four layers are filled with a rich vanilla butter frosting and a hint of lemon. Then, without a word just indulge. Couldn't agree more! I have yet to find a recipe that embodies the divine slice at the Montecito Inn! When driving through SB, it's always on my "take out" list!
